Sustainable Gastronomic Tourism: A Systematic Review and Bibliometric Analysis

Abstract
Gastronomic tourism has emerged as a key component of sustainable diets and a vital dimension of global travel, reflecting tourists’ growing interest in experiencing destinations through local food cultures. This study investigates the evolution of sustainable gastronomic tourism using a systematic bibliometric review. Bibliometric analysis is applied for both performance analysis and science mapping, while a systematic review clarifies the intellectual structure of sustainability-oriented gastronomy within tourism. The study is based on 168 articles indexed in the Scopus database between 2007 and 2025, analyzed using Biblioshiny and VOSviewer. The results identify the most influential authors and their major contributions, the leading countries in terms of research productivity and collaboration, and the journals with the highest citation impact in this field. Keyword and word-cloud analyses reveal sustainability, gastronomy, and gastronomic tourism as the dominant research themes. Accordingly, the review pursues two main objectives: first, to examine current research trends in sustainable gastronomic tourism through bibliometric techniques; second, to systematically synthesize the existing literature. The findings contribute to the development of sustainable gastronomic tourism by supporting the preservation of local food heritage, encouraging the use of local and organic products, and offering directions for future research. Overall, this study provides practical insights.
